Mock Raspberry Jam 

3 Cups Ripe Figs
3 Cups Sugar
Raspberry Jello 6oz ( 2 small boxes or one large)

Combine figs and sugar in a saucepan over low heat and use a potato masher to crush the figs. Stir in jello and mix well. Increase the heat until you brig it to a boil then reduce and simmer 25 minutes. Stir often to keep from sticking and as the figs soften keep mashing them up. Seal and water bath 5 minutes.

Strawberry may be substituted.

In East Texas we have an abundance of figs but sadly we lack a lot of raspberries around here. When I do find some of the real deal the last thing I want to do is make jam out of them. I most generally avoid food coloring and boxed items but this is one of the few recipes I bend the rules for. I don't know how many people that have tasted this and never would have known it wasn't raspberry unless I told them.

Sure wish I had some figs... just to try this.  I might have to buy some just so I can try it.  My dad is growing a fig tree, so maybe some day I will have plenty.  :)

@JMTKMS: We hit the jackpot this year. My garden helpers parents (my son and his wife) just moved into a new home and to our delight there are two well established fig trees, one which produces the usual small type that's everywhere around here and one that is making nice large figs. They also have a very large area open that I'm eyeing to put in a small group of fruit trees.

@RoriTx: You are very lucky!!!!  My dads tree is only 3 feet tall, and it will be awhile before we are doing any real harvesting.  I will have to look around here and see if someone has an older tree.  I do not think that this is a real good area for them, but If I could find one that no one picks..... that would be great!
