Salsify 'Sandwich Island Mammoth' (Salsify)

Seeds are sown directly into the garden in spring as soon as danger of frost has passed. Prepare the soil prior to sowing seeds. Much like parsnips, salsify needs loose, well cultivated soil free from debris. Seeds are sown ½ inch (1 cm) deep, and once established, should be thinned to 4-6 inches (10-15 cm). Harvest roots in the fall, or leave some behind to develop a flower the following year.
