Mache is sown in late summer to mid-fall for spring harvest. The seeds are best broadcast generously over the soil surface and covered with ½ inch (1 cm) of soil, compost or hay. Seeds may be pressed into the soil prior to mulching with a board to level the bed. Seeds can be sown every ¼ inch in rows about 10 inches (25 cm) apart which will allow for larger rosettes (rosettes can reach up to 6 inches or 15 cm). Be sure to keep moist if the weather is dry.

This sweet green leafy lettuce can be eaten raw or cooked like spinich.
Mache grows low to the ground and must be hand-harvested. It is delicate and doesn't keep well, which is why is so expensive in the specialty food markets
