Salsify

Scientific name: Tragopogon porrifolius
USDA hardiness zones:
-

Also known as oyster plant, goats beard.

Salsify is a hardy, biennial root vegetable with edible tap root, young shoots, and flowers. Sprouted seeds can be eaten also.

Seeds are sown directly into the garden in spring as soon as danger of frost has passed. Prepare the soil prior to sowing seeds. Much like parsnips, salsify needs loose, well cultivated soil free from debris. Seeds are sown ½ inch (1 cm) deep, and once established, should be thinned to 4-6 inches (10-15 cm). Harvest roots in the fall, or leave some behind to develop a flower the following year.
