Whoo Hoo look at our squash harvest today

Heirloom Acorn (Queen) Squash

In the early spring we built a squash cage to keep the critters out of our squash. Mainly rabbits but we also had a ground hog move in this year. This is our first year ever having squash to pick that was not munched on by the local four legged ones.

Going to make some squash butter out of these and share with the other gardeners.


 Squash Butter ( I will double this recipe)

3 medium acorn or other winter squash


1/2 cup organic apple cider
3/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
*Peel and bake squash in covered dish for one hour at 350 degree's
*Use a potato masher and smash up the squash (should end up with a 3 cups or so of squash)

*add the rest of the ingredients.

*cook on top of stove on low heat stirring frequently for around 1/2 hour or until thick (to where your spoon stands up)

* I can them in pint jars but always keep on nice jar in the fridge for toast

I was given pumpkin butter as a gift this year and I had never heard of THAT and now Squash butter?  I looked at your ingredients...sounds wonderful...I LOVE that you all share...the best to you guys...

Oh you should make some, same directions with pumpkin. Sometimes I do add a tablespoon or so of honey.

I never would have thought of squash butter! So glad you added all the new pix. Love your garden and what you are doing.
