Reason why I don't bake that often....

Is that I can't stop eating it after I make it!!!! If no desserts are in the house then its all good for my diet...  

I made this last night to use up some of the rhubarb in the garden.  Was super easy to make and is really yummy.  Its more like a coffee cake texture/taste.  Figured the strawberries go well with rhubarb so added some just to make it that much better....  it goes great with my morning coffee!  =)

I am really going to have to get more rhubarb plants.  I need to get some roots from someone.  I think we are going to loose at least one of my plants from the poison spray... might even loose both . :(  Last year my plants died too.  I am not having very good luck.  It does grow well here, but I just have to work on it.  
I copied this recipe down, and I love it cause it does look so easy, and your picture makes it look sooooo good.  I will let you know when I have tried it.  I really need to find a rhubarb source.  I still need to make the pudding cake and now, this one too.  Plus, I need to make the liqueur and I really do want to make the kuchen again.  Busy Busy, Eating Eating.... what a way to go!

@JMTKMS:My mom gave me one of her rhubarb roots this spring - I think I bought my other one at the local nursery the other year.  I had issues at 1st too - I think it was in an area that was too wet, and the roots would rot, I put in drain tile around the perimeter of my bed last year and that really seemed to help.  This dessert is not at powerfully sweet as the pudding one, but then again that makes it easier to eat more... not sure thats good.  lol!   Yeah that liquor recipe looked interesting... might have to look into make that!  So did the sorbet!

@PYehl:  I want to find strawberry rhubarb (red) for the liqueur, as it will look better.  My friends have green plants that taste wonderful, but do not add the pretty color.  All good, though.

@JMTKMS:I have one of each... the greenhouse one is a red one, the one my mom gave me is a green one.

I have never grown...and can't remember eat... rhubarb.  I need to find some.  It is not very popular in South Texas.  It sure looks tasty.

@Clenram:I used to eat it raw when I was a kid - take a small dish a of sugar - dip the rhubarb in it and crunch crunch crunch.....  it is sour raw, but i love sweet & sour...    As I was making the dessert last night I was thinking I wonder how many people used to die from trying to eat plants - such as the rhubarb leaves are poisonous , but the stalk isn't - so how many people tried to eat both before it caught on that you can only eat the stalk?   I mean how many of us today would just walk up to a plant and say "hum that looks interesting... i think i'll eat it and see if doesn't kill me or make me very very sick"  And how all this information that we have today about what is edible - how did that travel, how long did it take for the news to get to different parts of the world...  yeah I guess I think too much when I'm cooking.  =)

@PYehl:  Me too, I think to much.  But I love it.  And, I agree, it is amazing how food have been "figured out" over time.

@RoriTx:LOL!!!  I know as I was making it last night I had to laugh and think "yeah this isn't getting me closer to the abs I want!"  But it tastes sooooo good! Guess I just buy new shorts.  lol

I am learning to bake with Splenda and less saturated fat because I LOVE baked goods. My Dad is diabetic and several years ago I was diagnosed with Type 2 Diabetes. I made some changes to the way I cook and eat and I have it completely under control.

Oh I am not a fan of rhubarb, but I feel you on the diet. I'm miserable for junk food.

@linzelu100:for me its anything sweet.  I try to just eat plain fruit for my sugar fix - I don't feel "as guilty" then...  but I love skittles, twizzlers... anything super sweet with a fruity taste.  I don't crave salty and chocolate that much...  its the sweet/fruity that I can't stop myself.
