Harvest time...

I have corn on the grill that will be dried for use in the winter. Cabbages are waiting to be shredded for the first batch of sauerkraut of the season, 6 pounds of peaches will become Peach and Cilantro Salsa. I'll have to purchase a few more boxes of peaches to make 3 more kinds of Peach Salsa, Peach Chutney and Peach Jam, not to mention a few peach crisps and pies for the freezer, maybe even a cobbler or two. Then I will need another box of peaches to dry! Later, I will get pears and apples and make some tasty treats with those fruits too. I have some Gravensteins ready to pick for applesauce and some apple crisp. When I get other apples, I will also mix them all together and juice them and I'll make another gallon or two of cider vinegar this year. Then there are the veggies... I am anxiously awaiting tomatoes and peppers in abundance. I have a pretty long list for the tomatoes, tomatillos and peppers!

Wow... I have a lot to learn... but, I do fine with what I make and I really love just listening to what others make.  I have not made alot of salsa's, but they sure do sound good!  We do not eat much salsa, but I am beginning t... think that that is because we have not tried the "good stuff".  Peach Salsa sounds wonderful.  We do not usually get many peaches, as we do not know an orchard owner...  But, I do expect to be able to pick Damson Plums really soon, and the pears soon after.  Apples, I have not checked on yet... Guess I better, as things are getting ripe at different times this year.  Well, better go finish my beans.. :)

@JMTKMS: I think you do a great job with what you have! I love salsa, and I eat it at least once a week, so I like to make a lot of different kinds. The peach salsa is also a good simmering sauce for chicken or pork. I think I will make some roasted corn salsa as soon as I get enough ripe tomatoes. I am hoping to get over to Eastern Washington in the next few weeks... I have to take the truck in tomorrow and have someone look at it, it keeps stalling at stoplights, UGH! I'll let you know as soon as I figure out when I can head over that way. I had better get back to my cabbage. It's time to shred cabba... for sauerkraut... :)
