To the Garden with you!

Winter is over & Spring is running in with shorts on! Tank tops & too hot to wear shoes kind of day & it's sticking around for at least 2 weeks. Huge smile!
The Kale has been transplanted to the garden as well as a few early starts of the Romanesco Broccoli. The salad tub had it's time in the sun today as well. Hoping the day time warmth will speed things a bit. I began the bench seat I am putting on the far end of the garden fence. The back 2 fence sections have been put in place so all thats left is finishing the bench & making the double gates.
The elderberry trees are showing leaf buds as well as the Rugosa rose. The Pear tree's are also showing the start of leaf buds.
My wee one goes back to school in the A.M so I can go back to my morning routine of swimming laps. I was getting so tired during the day and forgot what it felt like when you suddenly stop intense activity for more then a few days. Fit it in today while my husband was home, so it jump started the garden work day.
Now to close the house down & turn off the grow lights. Big day outdoors tomorrow. Thank you Spring!!!

I love elderberry jelly but I haven't had any in 30 years. We had a tree in our yard when I was a teenager and my mother loved jelly. It was one of the first things (jellies) I taught myself to make since she really wasn't one to cook.

Do you have a place to put an elderberry tree? I am seeing them more & more in the nursery catalogs & surely there is a place of good repute online to order from. How wonderful it would be to relive memories of your younger years. I have about 5 of them that need moved. 1 is nice & big with the 5 too close to her. I was super excited to have discovered the elderberry trees. I have yet to make jelly from it and it is on the must do list for this year. Our first year here, the birds got to them before I could, leaving just enough to make a tincture and last year I used as much as I could gather to make the first year tincture even stronger. I did attempt to make elderberry jelly but was made with truvia. It was NOT very tasty. lol. A neighbor of ours is diabetic so I try to make things like that for her to enjoy.

I'm not a Truvia fan either. I've never really thought to check if an Elderberry tree would grow here. We've planted peach,plum,fig and persimmon trees. We planted a Gala and Granny Smith apple tree but they didn't make it through the heat. I also used to love elderberry syrup on my pancakes but that may have been from a few failed jelly batches early on. lol

I am going to plant a couple of elderberry trees this year. Usually we just gather wild berries but I would like some closer to home. Last time we made some jelly with Splenda and some with home grown honey for the diabetics. The Splenda was OK but the honey was awesome!

@HorseLady:PLEASE do share how you made it with honey. I did not know you could do it &I now have my own hive with it being the second year now so we should have a very nice harvest later on.
