Today we harvested half of our potato harvest and I think these should get Tom through the winter...and any number of neighbors as well! Time for potato salad, mashed potatoes, potato pancakes, twice baked potatoes, hash browns, french fries, scalloped potatoes. I need to get ahold of Rita and see if she can teach me a good gnocchi recipe!
On Check Please last night they showed pesto mashed potatoes which got me salivating. No recipe, but it doesn't sound hard to improvise...swap out the butter with pesto?
I don't even remember the restaurant (it didn't get rave reviews overall) but the idea of pesto mashed potatoes stuck... let's try it & compare recipes; my buddy Paula thinks sour cream or butter may be needed in addition to pesto for creaminess; let the games begin!
