I could not be more pleased with last nights meal. It was a great team effort from everyone in the house and every single fresh ingredient came off of the property. Everything we ate, except for the sausage and corn meal that made the polenta, was grown here! We had grilled zucchini, all varieties; an incredible salad with mixed lettuces, blanched beans, purple, black wax and dragons tongue and grilled apricots from the exploding apricot tree on the property; polenta topped with stinging nettle pesto with stinging nettles that Callie and Randy foraged from a stand along the side of the driveway at the bottom of the property. The pesto was great, made just like a standard pesto but substituting the basil for nettles. They are stingy but once boiled the stinging follicles just dissolve and they are ready to eat and/or use in a recipe. Callie also made the liquid into a tea which is helping her allergies! What a wonder plant! And, what a wonderful meal!
We're a bit behind you but we also had a mostly-homegrown meal last night; a stir-fry with the last of our spring crop of snow peas, some garlic scapes and collards, and the first of our sweet banana peppers. Brown rice, tofu & mushrooms were purchased, but the fresh ingredients were the stars. You've inspired me to pick some nettles & make tea or maybe stock with the rest of the garlic scapes... happy summer solstice to all!!
I'm especially envious of the "grilled apricots from the exploding apricot tree" since the stone fruits around here took a big hit when it got hot in March followed by killing frosts...
