    Looks like I need to re-read the chapter on parsnips- kinda stubby!

I thin them around 3 inches a part and harvest by first snow fall.

Thanks for the tipLCG- I think I had them at 4" apartĀ . I think part of my problem too was that the soil has quite a bit of clay and it was still a little wet when we tilled so it got a hardpan layer about 6-8" down. And it sounds like I watered them too much so they didn't need to go deeper. This year I will try mixing in peat and compost and a drip irrigation system...and that 3" spacing you recommend!

Good information to know.....I am going to grow parsnips for the first time this year because I love shepherd's pie.
